What is green tea?

Green tea is a type of tea that has not been oxidised and is made from the Camellia sinensis tea plant. Its flavour is typically fresh and vegetal, but depending on the variety, it can be light or strong, sweet or bitter, nutty or grassy, smoky, or with a seaweed note. It  is primarily produced in Japan and China. Green tea flavouring is determined by terroir, which is a unique set of climate and environmental conditions.

How is green tea produced?

Green tea leaves are harvested from the Camellia sinensis plant and quickly heated (via pan firing or steaming) and dried to prevent excessive oxidation, which would turn the green leaves brown and alter their fresh-picked flavour.
